I am testing the AcyMailing and I have a problem with configuration. How to change the color of the words that appear for the inscription of the users?
Nom
Email
Receive

For some reason, it is grey, unlike the rest of the text, and as it is the same as the background on the site, it is invisible. I couldn't find how to change this.

In your own template.css file (in your template, not in AcyMailing), you have the code (so around line 2116 of the file /templates/lacapitalefeuilles/css/template.css) :
td.key
{
	border-bottom: 1px solid #eee;
	color: #666;
}

I guess you should replace it by:
td.key
{
	border-bottom: 1px solid #eee;
	color: #E0E0E0;
}

I have another question, is it possible to set the radio button to 'yes'
as default, actually some people say they don't notice they have to tick this.
(for newsletter subscription)

Yes, sure.

Usually our users use the AcyMailing Module and not this page to subscribe users but you're right, the lists should be set to "Yes" by default for a new subscription.
We will modify the code for that.

If you want to apply this modification now, you can modify the file components/com_acymailing/views/user/view.html.php around line 30 in the function modify() you should add just after :
$subscriber->key = 0;

Then add the code:
if(!empty($subscription)){
	foreach($subscription as $id => $onesub){
		$subscription[$id]->status = 1;
	}
}
